Macarons au citron Ingrédients:
- 200g de sucre glace
- 125g de poudre d'amandes
- 3 oeufs
- 30g + 140g de sucre en poudre
- colorant (curcuma)
- 3 citrons bio
- 1 cs de maïzena
- Préchauffer le four à 150°C
- Mixer le sucre glace et la poudre d'amandes
- Séparer les blancs des jaunes, monter les blancs en neige avec une pincée de sel. Quand ils commencent à devenir fermes incorporer les 30g de sucre en deux fois
- Incorporer les blancs au mélange sucre-amande en soulevant puis aplatissant le mélange, et ajouter le colorant durant l'opération
- Déposer des petits tas ronds en quinconce et suffisamment espacés sur une plaque recouverte de papier sulfurisé et laisser reposer 30 minutes
- Cuire 15 minutes à 150°C
- Prélever les zestes des citrons et les mixer finement
- Dans une casserole, mélanger les zestes, le jus des 3 citrons, la maïzena et les 140g de sucre
- Cuire la préparation à feux doux, battre les jaunes d'oeufs et les ajouter dans la casserole, continuer la cuisson en remuant jusqu'à épaississement
- Décoller les macarons quand ils sont froids, garnir la moitié de crème et coller deux à deux

Lemon Macarons
Ingredients:
- 200g powdered sugar
- 125g almond powder
- 3 eggs
- 30g + 140g superfine sugar
- coloring (curcuma)
- 3 organic lemons
- 1 big spoon of cornflour
- Preheat the oven at 150°C
- Blend the powdered suger and the almond powder
- Separate the eggs, whip up eggwhites with a pinch of salt. When it's becoming stiff, add 30g of superfine sugar through two steps
- Mix whipped eggwhites with almond-sugar blend lifting and flattening the preparation, add the coloring during this step
- Put down little round heaps in spaced staggered rows on a plate covered with greaseproof paper and let rest 30 minutes
- Bake 15 minutes at 150°C
- Remove lemons zests and chop it finely
- In a saucepan, mix the zests, the lemons juice, the cornflour and th 140g of superfine sugar together
- Cook gently this preparation, mix the yolks and add them in the saucepan, keep on cooking until the blend gets thicker
- Peel off the macarons when they're cold, put some lemon cream on half of them and stick macarons two by two
